100% non-oaked Chardonnay, grown on the famous Kimmeridgean soils of Chablis. This is aged in all stainless steel vats so it maintains the steely-crisp freshess and liquid minerality of the soils, but it does undergo malolactic fermentation and lees stirring, which adds richness and complexity.
Tasting Notes: Bright, fresh, straw-gold color. An aromatic nose is dominated by almond paste, white peach, lemon rind, apple blossom and that limestone minerality that makes Burgundy great! Racy-bright with good, bracing acidity, but this has a great textural mouthfeel, with generous body and a salivatingly long mineral-driven finish. Just a solid white burg for the money. -Keith
